Thanksgiving mac

Thanksgiving is all about crowd-pleasers. Mac & Cheese fits perfectly. Dress it up a little and you’re going to have a star dish at dinner.

In the spirit of the holidays, we'll look the other way if you add a little extra butter.

Act fast! All of the following recipes require 2 boxes. Stock up now to get your in time for Thanksgiving!

Smoky Butternut Squash Mac

What you’ll need:

- 2 boxes of Classic Mac

- 5(+)Tbsp plant butter

- 1(+) cup plant milk

- 1 small butternut squash

- 2 Tbsp olive oil

- ~½ Tbsp smoked paprika

- Optional: panko breadcrumbs and fresh parsley to garnish

1. Preheat the oven to 375°F

2. Using a large knife, cut your butternut squash in half lengthwise. Scoop out the seeds and stringy bits from each half and discard.

3. Transfer the butternut squash, cut-side up into a baking dish and coat inside of the squash with olive oil. Season with salt and pepper. Roast in the oven for about 45 minutes, or until a fork will easily poke into the flesh.

4. Meanwhile, cook the macaroni noodles. Once drained melt and mix the butter in the noodles. 

5. When butternut squash is done roasting, allow to cool for a few minutes. Then scoop the inner flesh from the skin directly into a blender or food processor. Add the milk, cheese packets, and smoked paprika. Blend until smooth. Give it a quick taste. Depending on how mush squash was used, you may want to add a bit of salt. 

6. Pour squash mixture into the macaroni noodles and mix well. Transfer into a casserole dish. Optional: add a sprinkling of breadcrumbs.

7. Put in the oven to bake until the top turns toasty, about 10-15 minutes. Serve while it’s hot!

MUSHROOM & CRISPY FRIED ONION MAC

What you’ll need:

- 2 boxes of Truffle Mac

- 6(+)Tbsp plant butter

- 1(+) cup plant milk

- 8oz carton of baby bell mushrooms, sliced

- Handful of crispy fried onions

- 1 shallot, diced

- 3 cloves of garlic, minced

- 1 Tbsp olive oil

- Finely chopped sage, rosemary, thyme to garnish

1. Preheat the oven to 350°F

2. Sauté mushrooms, onion, and garlic until onions are clear and mushrooms are tender.

3. Prepare the Mac & Cheese as instructed on the box. Adding a little extra milk and butter is recommended for extra Thanksgiving decadence.

4. Combine mac & cheese with the mushroom mixture and mix well.

5. Pour Mac into a casserole dish. Cover the top with fried onions and sprinkle the herb mixture evenly. 

6. Put in the oven to bake until the top turns a toasty light brown, about 10-15 minutes. Serve while it’s hot!

Crispy Truffle Mac

What you’ll need:

- 2 boxes of Truffle Mac

- 6(+)Tbsp plant butter

- 1(+) cup plant milk½ cup panko breadcrumbs

- Vegan cheese (we used parmesan style)

- Optional: fresh parsley to garnish

1. Preheat the oven to 350°F

2. Prepare the Mac & Cheese as instructed on the box. Adding a little extra milk and butter is recommended for extra Thanksgiving decadence.

3. Pour Mac into a casserole dish. Sprinkle with breadcrumbs and as much cheese as you wish.

4. Put in the oven to bake until the top turns a toasty light brown, about 10-15 minutes. Garnish and serve while it’s hot!
